Swiss Mac and Cheese with a Kiss

16 oz. box of Penne Pasta

1 Tablespoon salt

2 Large Potatoes, cubed 3/4 inch

1-2 large onions, chopped

1/2 cup (1 stick) of butter

1-2 Pounds of grated cheese (Gruyere or Emmenthal or a mixture)

1 teaspoon of Kiss the Chef Universal Blend (add more to taste)

Bring 6 quarts of water and salt to a boil. put a pan on medium heat, melt butter, and sauté onions to a golden brown. Then set aside. In boiling water add potatoes, and let cook for 4 minutes. Add Macaroni to the potatoes and cook till tender, about 10 minutes. Strain the noodles and potatoes from the water. Make sure to reserve 2 cups of pasta water.

in a deep bowl layer the pasta/ potato mixture, cheese, and onion. Then, repeat this process. Shake Kiss the Chef - Universal Blend over the top, and about 1/2 cup of the reserved pasta water. Toss the mixture until the ingredients are all combined. Add more seasoning or pasta water for the right consistency and taste for you. Then, enjoy!
