Savory Egg and Sausage Strata

Ingredients
- 2 cups cottage cheese
- 9 large eggs
- ½ cup heavy cream
- 1 cup grated Parmesan cheese, divided
- 1 tsp KTCS Universal blend (or salt and pepper to taste)
- 1 heaping Tbsp chimichurri blend (or your favorite herb blend)
- 1 cup shredded cheese (pepper jack or cheddar)
- ½ lb cooked breakfast sausage, crumbled
- ½ onion, chopped and sautéed
- 2 cloves garlic, minced and sautéed with onions
Instructions
- Preheat oven: Set to 375°F (190°C). Grease a 9x7-inch baking dish with oil or butter. Sprinkle ½ cup Parmesan evenly over the bottom and sides; set aside.
- Mix the base: In a large bowl or mixer, combine cottage cheese, eggs, cream, KTCS Universal blend, and chimichurri blend. Whisk or beat until smooth and well incorporated.
- Add mix-ins: Stir in the sautéed onion, garlic, shredded cheese, and crumbled sausage until evenly distributed.
- Assemble: Pour half the egg mixture into the prepared baking dish. Sprinkle the sausage evenly over the top if not already mixed in. Add the remaining egg mixture. Top with the remaining ½ cup Parmesan.
- Bake: Place in the oven and bake for 35-45 minutes, until the center is set (no jiggle) and the top is lightly golden and toasted.
- Rest and serve: Remove from the oven and let cool for 10 minutes before slicing and enjoying.
Tips: Prepare the night before—cover and refrigerate the assembled strata, then bake in the morning for an easy brunch. Serve with fresh greens or hot sauce for extra flair!
