Mash Potatoes with a Kiss

Ingredients:
• 5 lbs. Yukon Gold potatoes, cut in half
• 5 cloves garlic, peeled
• 1 butter stick (8 tablespoons)
• 1 cup sour cream
• 1 (7oz) package cream cheese, softened
• 2 tablespoons Kiss the Chef Universal (or to taste)


Instructions:
1. Prepare the Potatoes: Place the cut potatoes and garlic cloves in a large pot. Cover with cold water. Cover with a lid and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 30 minutes.

2. Check for Doneness: Use a sharp knife to test the potatoes. Insert the knife into a potato—if it slides in easily without resistance, the potatoes are ready. Be careful not to overcook the potatoes, as this will result in a gummy texture.

3. Drain and Reserve Water: Drain the potatoes and garlic, but reserve 3 cups of the cooking water for later use.


4. Mash the Potatoes: Transfer the cooked potatoes and garlic to a large mixing bowl. Add 2 cups of reserved water, butter, sour cream, cream cheese, and
Kiss the Chef Universal. Use a hand mixer or potato masher to mix everything. If the mixture is too thick, add some of the reserved cooking water, a little at a time, until you
reach the desired consistency.

5. Season and Serve: Taste and adjust the seasoning with more Kiss the Chef Universal to your liking.
