Artichoke Quiche

Ingredients

1 pie crust par cooked.
1 Onion, chopped.
12 oz marinated artichoke hearts reserve ½ cup marinate, chop up hearts.
4 eggs
½ cup quinoa or breadcrumbs
2 cups shredded cheese Gruyere, Jack, cheddar, or whatever you have.
2 tablespoons fresh herbs such as parsley or chives
Or 1 tablespoon dried herb mix
1 teaspoon Kiss the chef Universal spice.
4 bacon strips cooked and crumbled.
Parmesan to top before baking.

Bake at 325 degrees.

Sauté onions in the reserved artichoke marinade for about 5 minutes and allow to
cool. Mix the remaining ingredients together in a separate bowl. Add the onion
mixture. Add the mixture to par cooked pie dough. Top with parmesan cheese.
Bake in the oven for 35 minutes or until firm to touch.
