Ingredients:
• 2 eggs
• 1 tablespoon lemon juice
• 1 teaspoon of Dijon mustard
• 1 teaspoon Kiss the Chef Universal Blend (or salt)
• 2 cups oil of choice (avocado, almond, or light olive oil)
Instructions:
1. In a blender or food processor, combine eggs, lemon juice, Dijon mustard, and Kiss the Chef Universal Blend. Blend for 20 seconds until smooth.
2. Slowly drizzle in ¼ cup of oil while blending until the mixture begins to thicken. 3. Gradually add the remaining oil in a slow stream, blending continuously until fully emulsified and creamy.
4. Taste and adjust seasoning if needed.
5. Transfer to an airtight container and store in the refrigerator.
Pro Tip:
If the initial ¼ cup of oil doesn’t emulsify, add an extra egg to help thicken the mixture.
